For us, the gastronomic revolution means not abandoning the oldest and healthiest concept of cooking: using only seasonal and local ingredients, preparing dishes from scratch on the same day of service.

Cured meats and sausages from our production, warm focaccia, omelets with fresh eggs, legumes and cereals, crostini, and vegetables.

Local pasta varieties like Picchiarelli, strozzapreti, tagliatelle, and strangozzi.

We prepare our fresh pasta paired with pork, wild boar, goose, mountain chicory, and asparagus sauces. Each season inspires new combinations and flavors.

Meats

Guinea fowl, chicken cooked on the fireplace, oven-baked steak, rabbit, puntarelle, or pork sausages, lamb.

For us, roast is a serious matter, and the skilled hands of Enzo always enhance the goodness of the meats we raise.
